Paradise Ridge Winery’s 2005 ‘Elevation’ Cabernet Sauvignon gets its name from the vineyard location and the raising of the winemaking artistry bar. The Rockpile Vineyard is 2000 feet above sea level on the historic Tennessee Bishop Ranch – the highest vineyard in the exclusive Rockpile appellation between Lake Sonoma and the Pacific Ocean. The shallow rocky soil, long sunny days and temperate nights are ideal for cultivating intense, dense, complex Bordeaux varietals, and this wine incorporates three – Cabernet Sauvignon, Petit Verdot, and Merlot. The 2005 Elevation Cabernet is quite an enigmatic wine – although stylistically it’s restrained and reserved, there is a fruit profile that is immensely powerful, yet delicate at the same time. The sweet fruit has a broad spectrum of aromatics and flavors, all backed by some of the smoothest, softest and silkiest tannins that winemaker Dan Barwick has found from this vineyard. An amazing wine with richness, balance, depth, and a long finish.
